My favorite is posh.
We get Posh Bagels at work. They’re free, but it’s like eating round Wonder Bread, they’re so soft.
I never actually found any good bagles
I had some once in LA. That’s about it for the west coast. 😉 And I’m not even from New York — I grew up in New England, hardly known for its quality bagels. But they still taste like real bagels compared to the roll-like breadstuff going by that name here. (I agree that Noah’s makes very tasty bread products. They just don’t match ‘bagel’ in my mind, and sometimes I want the real thing.)
I’m hoping someone leaves a comment with good bagel suggestions. I’ll check back later.

That was gonna be my rec. Only good bagels I’ve found out here yet.
Izzy’s is my vote too. Be warned they close reatively early in the day. They also follow Jewish holidays. So you can not get bagels during passover.
Manhattan Bagels on 4th St in West Berkeley are “acceptable”, sayeth my Jewish New Yorker ex-wife. WHich was pretty high praise from her.

House of Bagels
Any place that makes “water bagels” will be using authentic methods. Noah’s steams theirs so it is really a Kaiser role that mated with a donut. BTW- Posh is also a steamed bagel establishment.
House of Bagels is one of my South Bay favorites. Pretty much if you call the place and ask if they make water bagels you will get one of two responses. 1) yes or 2) water bagel? If you get the second response chances are they steam.
What’s the difference? With a water bagel you first boil the dough after it has risen and then you bake it. Steamed bagels, well, they steam them (sometimes in the same oven) and then bake them.
Speak from experience
How did I know so much about bagels? It is not just my natural food prep inquisitiveness. I worked for Holy Bagel in Palo Alto for about 18 months. They were a water bagel place.

I second the “house of bagels” recommendation, only I’m speaking of the one in Walnut Creek. I find they make nice chewy New York style bagels, unlike that bready Noah’s stuff.
Saul’s Deli. It’s next door to the Bakery that I spent years of my life working in.
You didn’t say where this east-coaster is, so I don’t know if a Berkeley suggestion is any good but: Boogie-Woogie Bagel Boy, on Gilman in North Berkeley. (I’m pretty sure it’s Gilman.) The name is unfortunate, but the bagels are good.
And in Santa cruz, there is the wonderful Bagelry.
